I am a Happy Watermelon.

I also have developed some recipes over the years living on my own that are inexpensive, easy enough to make, and can freeze well for later.

I mainly have this to share recipes with my friends, but feel free to explore and share as well.

Lazy Cook's Latest Recipes

Common Things

Some stuff I always have and will assume you have around your kitchen:

  • Kosher Salt (Really, use the Kosher stuff.  Iodinized/table salt is fine but it is saltier by volume than kosher is.  Kosher works WAY better on meats and veggies due to its size).

  • Black Pepper (Whole corns in a grinder ideally)

  • Vegetable or Canola oil.  Something relatively flavorless and with a higher smoke point (NOT Extra Virgin Olive Oil, but regular olive oil should be fine)

  • Various Pans and Pots

  • A good knife for chopping and dicing

I also know a lot of recipes assume you know stuff already.  This one will too, to some extent.  However, here are some basic practical terms with a brief definition:

  • Sauté -  Cooking over medium-ish heat with a little oil until veggies start to soften.

  • Dice - Cut stuff into small pieces.  There are all kinds of ways of doing this.
