Eastern Carolina BBQ Sauce

Easy Eastern Carolina (Best Carolina) BBQ Sauce.
Makes 3 cups of BBQ Sauce
Ingredients
2 Cups Apple Cider Vinegar
1 Cup White Wine Vinegar (Or another cup of Apple Cider Vinegar)
1/4 Cup Dark Brown Sugar
1 Tablespoon Kosher Salt
2 Teaspoons Smoked Paprika
1 Teaspoon Dried Red Pepper
1 Teaspoon Ground Cumin
1/2 Teaspoon Ground Yellow Mustard Seeds
I like the mix of Apple Cider and White Wine Vinegar, but feel free to either experiment with other vinegars instead of the white wine, or just using entirely apple cider vinegar.
Everything after the salt is optional. You can just stop at the salt and have a vinegar sauce. I think the most traditional version is just 1 teaspoon of red pepper flakes in it. However, I personally like the additional flavors.
Instructions
In a pot, pour in the vinegar into a pot on the stove. Set stove to medium heat.
Add in the sugar and salt and stir as it heats. Once its all dissolved, take it off the heat and let it cool down so its easier to handle.
Pour into your container when it feels safe to do so.
Storing
Its mostly just vinegar, so you can store it in your pantry. That being said I usually stick it in the fridge out of habit. I like using a mason jar since its the right size. Shake well before you use it. I wouldn't freeze it however.
